Cold pasta with Hass avocado, smoked salmon, and Sicilian lemon
Ingredients for 4 people: 320g of short pasta (mezze maniche or fusilli), 2 Hass avocados, 150g of smoked salmon, 1 Sicilian lemon (zest and juice), 2 tablespoons of extra virgin olive oil, desalinated capers to taste, chives, salt, pepper.
Instructions: Cook the pasta al dente, drain it, and cool it under cold running water. Immediately dress it with a drizzle of oil to prevent sticking. Blend one avocado with the lemon juice, one tablespoon of oil, salt, and pepper until you achieve a smooth cream — this will be the base dressing. Cut the second avocado into cubes. Slice the salmon into strips. In a large bowl, combine the pasta, avocado cream, cubes, salmon, capers, and grated lemon zest. Gently mix, adjust with salt, and serve cold topped with chopped chives.
Recommended variety: Hass — the strong flavor pairs well with the smokiness of the salmon.
