Tuna and avocado tartare with toasted sesame and ponzu sauce
Ingredients for 4 people: 300g of very fresh red tuna, 1 Reed avocado, 1 tablespoon of soy sauce, 1 tablespoon of lemon juice, 1 teaspoon of sesame oil, toasted sesame seeds to taste, chives, salt, pepper.
Procedure: Cut the tuna into small, even cubes of about 1 cm. Do the same with the flesh of the Reed avocado. Season the tuna separately with soy sauce, sesame oil, and a splash of lemon juice. Season the avocado with just a pinch of salt and lemon. Using a food ring, first layer the avocado and then the tuna. Remove the food ring, sprinkle with toasted sesame seeds and chopped chives. Serve immediately with rice crackers or toasted black bread.
Recommended variety: Reed — large, creamy, and with a firm flesh, it holds its shape perfectly in tartare.
